Birria Crunchwraps MUKBANG | Quesabirria Crunchwraps w/ Consommé + Cheesy Gordita Crunch Sauce!

Today, we are making one of the best things I've ever eaten. Birria CRUNCHWRAPS. It's a quesabirria taco, with traditional birria flavors like cilantro, onion and lime, made into a Crunchwrap, and served with a side of delicious consommé + some homemade cheesy gordita crunch sauce! I had actually intended on making quesabirria cheesy gordita crunches but this worked better! Also this video took me forever to film because I had to film the cooking AND the eating part *twice* because of some unfortunate incidents. lol Such is life. Turned out great and happy to have this out into the world!

Here's the recipe I used for the CGC sauce (OG know as Baja sauce)! It's for a full homemade CGC so obv just skip to the sauce. I added a bit more of the pepper puree to my mayo and a tad more vinegar for extra zing. If you like it spicy leave the ribs and/or seeds in!

For the Crunchwrap, start with a large flour tortilla, then top with some shredded Oaxaca cheese, some birria that's been soaking in consommé, then a consommé fried corn tortilla (just did this on the stovetop -- see vid for example and use a nonstick pan!), then a handful of chopped onion + cilantro, then a big fat drizzle of CGC sauce! Then, depending on the size of your large flour tortilla you may or may not need a third tortilla to fill the gap on the top ( I did). If you need one, top with it now (I used fajita size but you can cut another size down if need be) and then close it up by folding in the edges in a crimped pattern. Then pan fry, folded side down first, until golden brown on both sides! Serve with a side of consommé and CGC sauce for dipping, and some lime wedges for squirting! Enjoy!!! This is one you can't not make. It's too good. Really.
