Easy Homemade Bacon In Your Fridge - From a Pork Butt Roast! *Edit* Turns out this is a well established practice and the end product is called "Buckboard" bacon! As I've said before, we never claim to be experts, we try things and share them with you so you will hopefully try them yourself and learn as well. *End edit*
I made approximately $10 worth of homemade bacon with something most people would have discarded.
While breaking down a whole bone in pork butt roast I noticed that the fat cap on top of the roast had some nice lean meat running through and instantly thought: "That looks like bacon or guanciale!"
So I trimmed it off and turned it into some home cured delicious bacon!
The process is super simple:
1/2 non iodized salt
1/2 brown sugar
juniper berries
bay leaves

Put in a ziploc bag for 3-5 days.
Remove from bag and rinse with beer or wine.
Return to fridge for 3-5 days.
Remove and enjoy!
You could hang this safely for a couple months in a cool room, cold smoke it for extra flavour and longer shelf life or, like us, vacuum seal and freeze for future use.
Easy and delicious and definitely saves money!
