Veteran's Day Special | Chili & Chocolate Cake

Today I'm sharing stories of my Dad's time in the Navy along with recipes for some of his favorite foods from his time at sea.

Chili con Carne
1 1/2 lbs. ground beef
1 medium onion, diced
1 green bell pepper, diced
1-28 oz. can whole tomatoes (or 2-15 oz. cans diced tomatoes) & their juices
1- 6 oz. can tomato paste
1 c. water
1 beef bouillon cube
1-16 oz. can kidney beans, drained and rinsed
2 tsp. salt
2 tsp. dried oregano
2 tsp. chili powder
1 bay leaf
mashed potatoes & saltine crackers for serving

Cook the ground beef and onions in a Dutch oven over medium heat until the meat has browned. Drain any excess fat. Add the remaining ingredients. Stir to combine. Bring to a boil. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally. Remove the bay leaf. Serve over mashed potatoes with saltine crackers. ENJOY!

Chocolate Cake with Coffee Frosting
2 1/2 c. cake flour
1 1/2 tsp. baking soda
1 tsp. salt
1 1/2 sticks unsalted butter, room temperature
2 c. sugar
3 1/2 oz. semisweet chocolate
1 tsp. vanilla extract
2 eggs
1 1/2 c. cold water

Preheat oven to 350*.
In a medium bowl, whisk together the cake flour, baking soda, and salt. In the bowl of a stand mixer with the paddle attachment, cream the butter and sugar for a few minutes. Melt the chocolate in a microwave safe bowl--heat in the microwave for about 15 seconds at a time, stirring each time until melted (mine took about 1 minute and 30 seconds). Allow chocolate to cool slightly. Add the cooled chocolate and vanilla to the butter mixture. Beat together on medium low speed for about 3 minutes. Add the eggs, one at a time, beating in between. Scrape the sides of the bowl then beat the mixture for another 3 minutes. Mix in the dry ingredients in 3 batches, alternating with the cold water until everything is incorporated. Spray a 13x9in. glass baking dish with baking spray. Spread the batter evenly inside. Bake at 350* for about 35-38 minutes (start checking for doneness around 30 minutes so you don't overbake). Cool completely before covering with coffee frosting.

Coffee Frosting
2 sticks salted butter, room temperature
1 Tbsp. instant coffee
1 Tbsp. water
1/2 tsp. vanilla extract
3-4 c. powdered sugar
2-3 tsp. heavy cream

In a large bowl, beat the butter with a hand mixer for about a minute. In a separate, smaller bowl, mix together the coffee and water until the granules are dissolved. Add the coffee liquid and vanilla extract to the butter. Add 1 cup of powdered sugar at a time, mixing after each addition. Add about 2-3 tsp. heavy cream to thin out the frosting slightly (you can eyeball this and use as much or as little to reach your preferred frosting consistency). Beat everything together until fluffy. ENJOY!
